2019 Cabernet Sauvignon
Our 2019 growing season started with a cool spring and continued with moderate temperatures through harvest, preserving the vibrant fruit flavors and balanced acidity in our Estate vineyard. We ended our season on October 14 by picking and crushing this Cabernet into four small open-topped French oak tanks. After one week of primary fermentation, we pressed the new wine into small French oak barrels to age for 32 months in our underground caves. Additional bottle aging before release in the Spring of 2024 has allowed this vintage to gain complexity and soften the tannins to a full, balanced finish.

Winemaker notes: Intense aromas of dark cherries with hints of red currant, black licorice, chocolate and sage mingle on the nose. More ripe fruit, vanilla and a hint of graphite unfold on the palate, where a precise balance of fullness, pleasing acidity and fine-grained tannins combine for a long, elegant finish.
